Cupcake Catchups

I just spent the morning catching up with an old friend who was in town for a few days... We decided to go for coffee (and tea) at the local Shingle Inn because it was close by and has amazing desserts! We weren't disappointed! I had a lovely tasting (but perhaps with a bit too much froth) flat white and a delicious cupcake!

It was described as a Passion Cupcake so I assumed it would have a passionfruit flavour to it, but it actually tasted on vanilla! I'm not complaining at all - my all time favourite cake is vanilla and this one tasted wonderful!

My friend had a Charlotte cake and English Breakfast tea and we spent over 2 hours catching up and talking about our recent travels! :)

Mini chocolate cupcakes

Mini chocolate cupcakes with pretty pink swirly icing! I made these especially to bribe some employees at a work meeting this afternoon and I have to say it worked pretty well! I don't eat chocolate at all so when the recipe produced 48 of these little cupcakes, I admit I was worried there would be a few left over! I really didn't have to worry at all... my chocolate cupcakes were a hit and I went home with an empty tupperware container.

Belgian Biscuits

My first attempt at baking cookies for a long, long time... I don't know if I can call them successful but I really had fun making these! Raspberry jam sandwiched between two cookies (butter cookies with cinnamon) and coated with icing and pink sugar!! Very, very sweet!! Maybe too sweet. (!)

We had a few disasters making these... trying to use cookie cutters with this was quite hard...too sticky! We also don't have a food processer to mix it properly... so it was all done by hand, from scratch!

I'm definitely going to try and make them again soon and fix all the small mistakes to make them ever better!

Hello, cupcake!!

Say hello to a Lemon Meringue cupcake bought from Coffee Fix Cafe at Carindale. Really light and fluffy cupcakey goodness with a slightly bitter gooey lemon centre and topped with marshmellowy meringue!

Very yummy... wish I could say the same for my coffee from there... 2cm froth on a flat white? This little cupcake almost made up for my terrible coffee!

Pink Sparkly Cupcakes

Oh, hello pink sparkly cupcakes :)

These are butter cake with *super* vanilla icing in pretty pastel pink! Note the pretty cupcake plate that i got for my birthday a few years ago!

Vanilla Latte Cupcakes

This afternoon I invited my mum and sister over for tea and the grand tour of my new apartment! Alas, I didn't have anything to serve with the tea and so making these cupcakes was very much a last minute decision!

Unfortuntely the new place was without mixing bowls... How did my new roommate live like this?!?! Even though I had very little time, I had to walk to the shops and pick some up! I may have also bought some new and very pretty mini cupcake cases too....

These cupcakes were made by altering a vanilla packet mixture. I used ground coffee and vanilla essence for added flavour to make them very vanilla-lattesque....

Mocha Cupcakes

I've been asked three or four times why I bothered to make cupcakes with chocolate in them if I can't eat them... (I'm allergic to choc!!) But I couldn't resist making these... once again I've been wanting to make Mocha cupcakes for a longgg time so here we are!! Been wanting to use my special blue serving plate too...

Last night a couple of friends came over for dinner (chicken and spinach lasagne) and this was the special dessert! Not sure how they tasted as I can't eat them myself but there's only 2 left so they must have been edible :P

These were made with real espresso shot in the cake mixture and coffee in the icing too for proper Mocha flavouring! The sprinkled topping is Flake which was a last minute addition! :)
