Mini chocolate cupcakes

Mini chocolate cupcakes with pretty pink swirly icing! I made these especially to bribe some employees at a work meeting this afternoon and I have to say it worked pretty well! I don't eat chocolate at all so when the recipe produced 48 of these little cupcakes, I admit I was worried there would be a few left over! I really didn't have to worry at all... my chocolate cupcakes were a hit and I went home with an empty tupperware container.

Belgian Biscuits

My first attempt at baking cookies for a long, long time... I don't know if I can call them successful but I really had fun making these! Raspberry jam sandwiched between two cookies (butter cookies with cinnamon) and coated with icing and pink sugar!! Very, very sweet!! Maybe too sweet. (!)

We had a few disasters making these... trying to use cookie cutters with this was quite hard...too sticky! We also don't have a food processer to mix it properly... so it was all done by hand, from scratch!

I'm definitely going to try and make them again soon and fix all the small mistakes to make them ever better!

Hello, cupcake!!

Say hello to a Lemon Meringue cupcake bought from Coffee Fix Cafe at Carindale. Really light and fluffy cupcakey goodness with a slightly bitter gooey lemon centre and topped with marshmellowy meringue!

Very yummy... wish I could say the same for my coffee from there... 2cm froth on a flat white? This little cupcake almost made up for my terrible coffee!

These are butter cake with *super* vanilla icing in pretty pastel pink! Note the pretty cupcake plate that i got for my birthday a few years ago!
